boneless, skinless chicken breasts, thinly sliced
2 cups Charleston Mix “Bold & Spicy” Bloody Mary Mix
3 bell peppers (red, yellow and green), seeded & sliced
1 red onion, thinly sliced
Place sliced chicken in a gallon-sized zipper bag with Charleston Mix and marinate in the refrigerator for 30 minutes to an hour.
Heat an oiled griddle pan over high heat until smoking. Add chicken and peppers to pan and season with salt. Cook, stirring occasionally, until chicken is cooked through and peppers and onions are soft (about 10-12 minutes).
Serve with warmed tortillas and fixings of choice:
